This winter has been brutal. The dark days, extremely cold temperatures and endless snow cover have definitely gotten to me. It seems to be the same every year about this time, but this year has been harder than others. This weekend I made a decision that I needed to make a change in order to get me out of my winter funk. In the past, my first thought would have been to go have a fun weekend out. Take a trip, head downtown for a nice dinner or perhaps go on a shopping trip. Well, that’s not how I think anymore. I know that spending money won’t make me feel any better about my life. I knew that there were simple actions I could take to get rid of my winter woes.
Baked Taco Pasta
Sunday night is my favorite night of the week to make dinner at home. I have plenty of time to prep and lots of fresh groceries. On Sundays, I try to make a meal that I can eat leftovers from. I’m a big fan of eating leftovers. I hate wasting food. It’s always nice when I can get a couple meals from dinner.
What’s In Your Closet?
Last weekend I said the phrase that all women say from time to time, “I have nothing to wear”. At that moment I had a strong urge to go shopping. Instead of a shopping trip, I decided to give my closet a second chance. I thought that I would set a challenge for myself. In order to appreciate the clothes that I already own, I decided that this past week, I would put together a new outfit, with old clothes, every day and wear them to work. That’s just what I did.
Married to a Pilot
Being married to a pilot is a different lifestyle than most marriages. I didn’t know anything at all about aviation or the pilot industry before I met my husband. All I knew was that pilots had free airline travel, which I thought sounded pretty great. What I have learned is that there is so much more to the career than anyone else would understand.
Pineapple Avocado Salsa Salmon
Lately, I’ve been in the mood for salmon. I love salmon! There are so many different ways that you can make a salmon dish. Ever since we got rid of cable, I’ve been watching a lot of cooking shows on the local stations. I am obsessed with the Live Well Network. There is this one cooking show I really like, called Mexico: One Plate At A Time. Rick Bayless is the host of the show. He is always making the most delicious looking Mexican dishes. I’ve been watching him make all kinds of salsas. I love unique salsas, with different flavors. I wanted to somehow combine my salmon and salsa craving, so that’s when I headed to Pinterest for some inspiration. That’s where I got the idea to make Salmon with a Pineapple Avocado Salsa.
My Closet~ What I Wore Wednesday
I know I’m a day late on posting my outfit, but I’ve been super busy this past week. I haven’t posted an outfit on Wednesday in a couple weeks, because it was New Years Day last week and Christmas the week before, but I do want to continue to post one every week. It challenges me to find new outfits in my closet every week. It’s not always easy to find old clothes and make them into a new outfit, but that’s my goal in order to stay thrifty.
